Gingerbread biscuits. - SILJA - 07-12-2014 A Swedish tradition this time of the year is gingerbread biscuits. Around Christmas and New Year we have them everywhere. Really tasty. Now a new pattern is released. The TRISKALION! On a party lately Bjorn Gunnarsson the Swedish rider who made a good result in MGP 2014 offered the news to his team on a pre Christmas party. A report from the party say that there were many broken legs! RE: Gingerbread biscuits. - Amsterdam - 07-12-2014 Hi Silja, Taste should resemble our speculaas, which indeed traditionally is only baked in compact shapes, to ensure as little breakage. Speculaas are shaped in wooden planks, with cut out designs. The newly released pattern biscuits, were they made by someone at home, or shop bought? I did wonder, for the Swedes to set up production line of something so specific would be quite something so therefore thought maybe some of your biker friends would have done their own woodcarving! This year I opted to make a different kind of speculaas; put the spices that are so specific for the gingerbread/speculaas into a cake, baked in a flat tin, spread with raspberry jam and topped off with an almond meringe (whipped egg white), which produced a lovely cake. Since I'd like to keep fitting my biker leathers, gave most of it to my daughter who took it home tonight. Students breakfast on anything, so she will surely put it to good use. Anyway, the three legged biscuits look quite nice on your Swedish kitchen table. When next on the island, I'll look for a cookie cutter! |
