I see... I did wonder, for the Swedes to set up production line of something so specific would be quite something so therefore thought maybe some of your biker friends would have done their own woodcarving! This year I opted to make a different kind of speculaas; put the spices that are so specific for the gingerbread/speculaas into a cake, baked in a flat tin, spread with raspberry jam and topped off with an almond meringe (whipped egg white), which produced a lovely cake. Since I'd like to keep fitting my biker leathers, gave most of it to my daughter who took it home tonight. Students breakfast on anything, so she will surely put it to good use.

Anyway, the three legged biscuits look quite nice on your Swedish kitchen table. When next on the island, I'll look for a cookie cutter!
